An exceptional geisha coffee from Creativa Coffee District in Panama. La Mimada is produced by Mario Lezcano and undergoes a dynamic cherry process, anaerobically fermented for 51 hours. This coffee is incredibly sweet, with deep fruits like black plum, floral notes of bergamot and early grey tea, and rich chocolate. It has been amazing every way we've tried it. When brewed as a pour-over, it offers light floral notes with black plum and deep sugars. Espresso enhances the chocolate and intense deep-fruited sweetness.

Origin Story

The Lezcano family boasts five generations of coffee production since 1947 in Renacimiento, Santa Clara. Santos Café Panamá operates 55 hectares of plantations with a blend of caturra and catui, grown in volcanic soil at elevations ranging from 1,100 to 1,400 meters above sea level. La Mimada lot features Pacamara, Caturra, Yellow Bourbon, and Geisha varieties, benefiting from ample shade and temperature fluctuations below 13ºC, resulting in a sweeter and brighter cup profile.

Beans from La Mimada undergo various processing methods such as Wash, Honey, Natural, and extended fermentation, all dried on African beds under the sun for 20 to 28 days. The handcrafted cup of Santos Café Panamá is a result of the dedication of a professional team, including the family's Grandfather and strong associates, who carefully harvest and process the beans. Continuous learning from clients and friends further enriches their craft.
