Experience the meticulous craftsmanship behind this Geisha Lavado White Honey coffee, a crown jewel in specialty coffee. Fans of Sebastian's Red fruit Pink Bourbon will love how wildly unique these coffees are. The White Honey Geisha is a bouquet of sweet honeysuckle, cane sugars, hibiscus tropical tea, and juicy sweetness. 

Each bean is processed with unparalleled care, starting with a rigorous selection of cherries—95% ripe and 5% semi-ripe—to ensure optimal flavor.

The journey continues with a precise anaerobic fermentation process, where cherries rest in 200-liter tanks for 48 hours at a controlled temperature of 18°C. CO2 injection and submersion in oxygenated water enhance the fermentation, unlocking complex flavor profiles.

Post-fermentation, the beans are delicately dried over 25 days using shade netting to preserve their quality. This two-phase drying process is followed by storage in Grain-Pro bags for 15 days of stabilization, ensuring peak freshness.

The result? A coffee that captivates with its vibrant complexity and refined taste—an experience crafted for true coffee connoisseurs.

 
As roasters, we fine-tune every roast to highlight maximum sweetness, flavor, and aroma. Sebastian's craftsmanship makes this process feel effortless. His Red Fruit CM strikes a balance between our Anaerobic Ethiopia Worka Sakaro and Jairo Arcila Peach CM, and we believe it may be the finest coffee we've tasted this year.

Origin Story

Sebastian Ramirez is a fourth-generation coffee farmer with over 12 years of experience. He has a presence in multiple countries in Asia and Europe and has joined our mission to make coffee farming exciting. As a mentor on the Young Producer Program, he brings his expertise to the table.

Sebastian began as a traditional grower but eventually delved into fermentations and made connections within the industry. Nowadays, he is a master in carbonic maceration, coffee profiles, and varietals. We are honored to represent him and can confidently say that his coffees are anything but ordinary.
